When I made pickled zucchini, and we had an omelette with grated zucchini folded into the egg for Sunday brunch. Instead of eating it with tomato sauce on top, like the recipe suggests, we ate it with sungold tomatoes on the side.
Today I made double chocolate zucchini bread for breakfast.
And it will be sauteed summer squash with corn tortillas, beans, cilantro, and lime for dinner. Because I suspect more squash is on its way in my Thursday CSA box.
PS, it’s official – all the squash I had has been cooked, and mostly eaten. Bring it on, tomorrow’s CSA!
