Deb's Lunch ... and Dinner and Breakfast too

A so-called normal week

February 25, 2016 by ds83473@gmail.com

I guess I’m having a normal week, at least in terms of not going back and forth to Chicago all the time.

Rach is here, and came in last Thursday, which is unusual; she usually comes from Sunday to Saturday. It was so that she could work on Friday, and then over the weekend, prepare for a minor medical procedure on Monday – you know, the one where you have to drink a half gallon of vile liquid to clean out your gut.

I worked from home on Monday morning, recorded lectures in PJs, then showered and went and met some friends for lunch at a Mediterranean place by the Ashman branch library. I had the veggie stew. I managed to run a few errands around the lunch – picked up library books, and socks I’d ordered from REI, then stopped at the co-op on the way home. I thought I’d manage a real dinner, but snacked too much to be hungry for it. I had online class at 7:00 and somehow it was a rough one. I left them this note with the recording, next day:

I thought that going over how to do exercise 4 would be helpful but it seemed to paralyze students instead. I’m going to try the same thing in the face to face class and see if it works better in person. Please let me know if you have any questions.

Too much junk was a re-occurring theme. On Tuesday I walked a lot – Rach and I got out for a walk first thing, then I walked to and from a meeting on the west end of campus. I took the 80 bus home, but then that’s still a little walk from the stop. I undid any good effect of all the walking, though. I packed a lot of food, because I had to stay at work until 6:30 to observe someone else’s class. I had banana muffins and blueberry muffins (took the whole batch to share, but that meant I could eat some too), oatmeal with dates and apples – that was too much, so I stashed it in the fridge to eat the next day, and a bagel to make into a sandwich with avocado & Siracha mayonnaise. When I got home, my computer keyboard died and I needed batteries, so I drove over to Target and bought the batteries and a box of what they called “movie-size” bit-o-honey, 3 servings, something like 18 pieces – 450 calories – that I finished.  My stomach hurt on Wednesday morning.

Wednesday was a better day food-wise. I ate that oatmeal for breakfast with a banana. For lunch, I had an orange and dab of gluten free mac & cheese with roasted cauliflower that Rach made over the weekend when she was only allowed soft, light-colored food. We were going to walk after work, but on the walk home it was so cold and windy, we wimped out. In the meanwhile, because the tire pressure warning light came on when it was below zero, I took the car over to the closet gas station and checked the tires and added more air. Of course the light did not go off.  And then for dinner, I made this plate:

Sweet potato, coleslaw, cilantro rice

Today, Thursday, I had cottage cheese and Bubbe prunes (Combine pitted prunes, a little brown sugar, and orange or lemon slices in a heatproof bowl. Pour in enough boiling water to almost cover the prunes, stir, out a lid on, and stick them in the fridge overnight before eating. Good, my fave, but I think I want to try these not-Bubbe prunes next.) for breakfast and avocado toast for lunch. I resisted the donuts in the front office. I made BBQ chicken and these Nigella chocolate chip cookie dough pots for dinner. With Babcock Hall mocha macchiato ice cream.

To this more subdued saffron crocus.
