{"id":4697,"date":"2019-05-04T06:42:29","date_gmt":"2019-05-04T11:42:29","guid":{"rendered":"https:\/\/www.debslunch.com\/blog\/?p=4697"},"modified":"2019-05-04T07:45:16","modified_gmt":"2019-05-04T12:45:16","slug":"april-to-may-food","status":"publish","type":"post","link":"https:\/\/www.debslunch.com\/blog\/2019\/05\/04\/april-to-may-food\/","title":{"rendered":"April to May Food"},"content":{"rendered":"<p>Trying hard to remember the last couple of week&#8217;s food.<\/p>\n<p>There was Passover, and <a href=\"https:\/\/www.debslunch.com\/blog\/2019\/04\/21\/april-is-the-cruellest-month\/\">then charoset muffins<\/a>, which I enjoyed but neither Anna nor Mark would eat.<\/p>\n<p>Last Friday we had<a href=\"https:\/\/debslunch.com\/new-recipes\/2018\/03\/11\/enchiladas\/\"> beef enchiladas<\/a> for dinner. I made a big batch of enchilada sauce using strained veggie broth that had been the base of our matzoh ball soup, 3 cartons to freeze, so I figured I should thaw and use the carton of sauce that I made and froze last September. I made 9 enchildas, we ate 3, and I froze 3 in a foil pan thinking I could send them home with John &amp; Megan or Al &amp; Emma sometime. Mark always enjoys the enchiladas the first time, but it&#8217;s always hard to get him to eat leftovers of any type and Anna, unlike our all of our other kids, natural &amp; borrowed, who could always be counted on to pretty much hoover up enchiladas, doesn&#8217;t like Mexican as much.<\/p>\n<p>I told you about the <a href=\"https:\/\/www.debslunch.com\/blog\/2019\/04\/27\/april-over-yet\/\">cheesecake &amp; sweet tarts<\/a> &#8211; those were eaten for the most part.<\/p>\n<p>For dinner last Saturday, the snow day <a href=\"https:\/\/www.instagram.com\/p\/BwzX8OUHmkB\/\">that wasn&#8217;t as dramatic as predicted<\/a>, I made <a href=\"https:\/\/debslunch.com\/new-recipes\/2019\/01\/06\/stove-top-mac-cheese\/\">stove top mac &amp; cheese<\/a> and <a href=\"https:\/\/debslunch.com\/debslunchblog\/recipes\/coleslaw-recipe\/\">coleslaw<\/a> (with a nice little head of Savoy cabbage I got at the co-op, my fave variety for coleslaw) and got out the last of the super bowl <a href=\"https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2019\/02\/2019superbowlweinies.jpg\">little weiners<\/a> in dough. I made a banana cake too, with cream cheese frosting, and made some cinnamon graham cracker sammiches with the last of the frosting. We ate our cake in front of the movie <a href=\"https:\/\/g.co\/kgs\/aXK6o5\">Colette<\/a>, with Keira Knightly &amp; Dominic West.<\/p>\n<p>And oh, yea, I thawed out some <a href=\"https:\/\/nyti.ms\/2y7AKgB\">bacon &amp; egg breakfast pizza<\/a> that had been in the freezer since last May, and heated it and left it out while I was at yoga, and my leftovers-hating family &#8211; and me too &#8211; actually ate it.<\/p>\n<div id=\"attachment_3319\" style=\"width: 498px\" class=\"wp-caption alignnone\"><img loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-3319\" class=\"size-full wp-image-3319\" src=\"https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2018\/05\/breakfastpizza.jpg\" alt=\"\" width=\"488\" height=\"650\" srcset=\"https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2018\/05\/breakfastpizza.jpg 488w, https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2018\/05\/breakfastpizza-113x150.jpg 113w, https:\/\/www.debslunch.com\/blog\/wp-content\/uploads\/2018\/05\/breakfastpizza-338x450.jpg 338w\" sizes=\"auto, (max-width: 488px) 100vw, 488px\" \/><p id=\"caption-attachment-3319\" class=\"wp-caption-text\">Breakfast pizza<\/p><\/div>\n<p>Sunday morning we had scrambled eggs with cheese on the side and bagels and fruit for breakfast, and chicken breasts with a rice and zucchini and ricotta casserole, using up the last of the brown rice that Rach had cooked for herself when she was here, for dinner. We&#8217;re doing special diets now &#8211; Rach was trying to avoid acidic foods, because she had recurring heartburn, and Anna has decided she doesn&#8217;t eat dairy.<\/p>\n<p>Monday I got home on the early side, hungry, and ate Jarlsberg cheese melted over toast with coleslaw on top &#8211; food of my childhood. I had to go upstairs to run an online class at 6:30, but before I did that, I made a little dish of baked pasta with jarred tomato sauce, and the ends of bags of two different pasta shapes that I now have in the closet because Anna leaves them, and chicken &amp; grated cheese left from Sunday. I put it into the oven to gently warm for when Anna got home from soccer practice &#8211; but that was how I found out she&#8217;s decided she&#8217;s off dairy &#8211; she left me a nice little note that she wouldn&#8217;t eat the pasta because of the cheese.<\/p>\n<p>Tuesday Anna overslept and even though I kept asking if she was OK she went to school anyhow, but then came home after first hour. After work, I stayed downtown for a reception and left Anna to fend for herself. And used the last of some vegan butter I had in the fridge, in place of coconut oil. I had to go to the library and stopped at Metcalfe&#8217;s\u00a0 on the way home and got a rotisserie chicken thinking that&#8217;d provide plain meat for Anna &#8211; and me. I ate my rice with shredded chicken on top &#8211; it was quite good, and Anna ate it, although I snipped off a bit of my fingernail, julienne-ing the kale.
