I think this one was the most fun yet. I demoed making the rajas, strips of roasted poblano and fried onions. I have a <a href=\"https:\/\/g.co\/kgs\/ZDgqab\">Rick Bayless<\/a> cookbook where he calls them &#8220;essential rajas&#8221;, and I can&#8217;t help but think of them as essential rajas whenever I make them.
